From the "Dickinson's Kitchen Secrets" cookbook, compiled by the Women's Guild and the Plymouth Club of the First Congressional Church in Dickinson, North Dakota (1951).
Upside Down Cake
Submitted by Mrs. H. H. Reetz
3 eggs, beaten very light
Add:
1 C sugar, cream well
1/2 C Pineapple juice
1 tsp vanilla
1 C flour
1 tsp baking powder
1/3 tsp salt
Topping:
Pineapple slices
1/2 C brown sugar
Mix dry ingredients and combine with liquid. Butter a pan well, and add 4 slices of pineapple and pour brown sugar on top. Pour in batter and bake in a moderate oven (350F), 45 minutes. Serve with whipped cream.
